Experience the Dining Car: a collection of eight authentic rail cars, including an original luxury “Pullman Club Car” from the 1800’s, AND a new vibe for the future. We are on a cosmic train, imagining a world that works for all of us, including our lands and water. That’s where these trains are headed!

Enjoy beautiful foods prepared with care in our galley kitchen. We aim for locally grown, or indigenous to the region, organic, and sourced from people we believe in. We have unique indoor Dining Car seating, and are the only place where you can dine directly under the Castle Crags. We often have live music or community events, and always have a lot of joy! We hope you’ll feel welcome and delighted.

Our new Executive Chef, Adam Ornellas, comes to us having honed his skills in some of the nation's top kitchens. From New York to San Francisco and several places in between, Adam has served as executive chef at Charlie Palmer Steak House, Starwood and W Hotels, and several Michelin-starred kitchens. Back here in upstate California, Adam started the kitchen at our local Denny Bar and opened his own restaurants including the former Harvest in McCloud!

Today, Adam is delighted to be back home and to be joining Jubilee Railroad Wilderness Lodge and The Dining Car, where his ethos for sourcing locally and sustainably is fully aligned. Drawing from his own Portuguese heritage and from the many cuisines he has had the opportunity to cook, he will expand on our global trains theme to bring dishes inspired by many cuisines, crafted in approachable ways that highlight fresh local ingredients. He is also committed to using our kitchen to teach and train the next generation of chefs for the region, in support of Dunsmuir’s reputation as a foodie capital.
